Minestrone Pasta Salad

I saw a picture of a pasta salad in a magazine, but it didn’t give a recipe.  It looked like a salad I would like so I made my own Italian salad using the ingredients I could see in the picture.  It has become a traditional summer salad for our family.

Minestrone Pasta Salad

1 12 oz box bow tie pasta
1 pkg. (3 oz) pepperoni slices
1 green pepper, chopped
1 can kidney beans, rinsed and drained
1/2 cup freshly grated Parmesan cheese
1/2 cup mayonnaise
1/2 cup Italian dressing

In a large pot, cook bow tie pasta according to package directions.  Meanwhile, add pepperoni (separate slices if needed), rinsed kidney beans, green peppers, and Parmesan cheese to a large bowl and stir together.

Drain the pasta when it is done and rinse with cold water until the pasta is cool to the touch.  Add drained pasta to the pepperoni mixture.  In a separate bowl, mix mayo and Italian dressing together until thoroughly combined.  Gently stir dressing mixture in with the pasta and pepperoni mixture.  Chill for several hours before serving.  Enjoy!
