I made some Pumpkin Spice Cupcakes a couple of weeks ago, and they were delicious. I created this recipe which is a little simpler using the cream cheese icing base from the other cupcakes, and it turned out awesome. So, here it is.
Chocolate Mocha Cupcakes |
1 box chocolate cake mix
1 8oz pkg cream cheese, softened
1/4 cup butter, softened
1 teaspoon vanilla
1 16oz box powdered sugar
1/4 teaspoon cinnamon
1 tablespoon instant coffee
1/2 tablespoon water
Prepare chocolate cake mix and bake according to package directions to make 24 cupcakes. Remove cupcakes to wire rack to cool. Cool completely. Beat cream cheese and butter until creamy. Add vanilla and gradually add in powdered sugar until well blended. In small separate bowl, blend together coffee, cinnamon, & water and let sit for 5 minutes to ensure the coffee is well dissolved. Add coffee mixture to cream cheese mixture. Frost cupcakes and enjoy!
