This recipe is an old one. I remember my mom making it for our family way back when I was a little girl. I have tried other banana bread recipes, but I have always come back to my mom’s. It is moist and not dry like some banana bread recipes.

3 eggs
1 cup sugar
1/4 cup apple sauce
1 cup flour
1 tsp. baking soda
3 bananas, mashed (very ripe, the riper the better)
pinch of salt
1 cup chopped pecans, optional
Combine eggs, sugar, and apple sauce in electric mixer. Add dry ingredients and bananas. Mix well. Add nuts (optional). Pour into greased and floured loaf pan. Bake at 350 degrees for 45 minutes. Cool 15 minutes before removing from pan. Cool completely.
This recipe was given to me by my mother. It has been her favorite banana bread recipe and is the only one she makes. I tweaked the recipe a little bit years ago. The original recipe called for 1/2 cup vegetable oil instead of the 1/4 cup apple sauce. I thought the original recipe was a little too moist for me sometimes so I lowered the liquid and substituted apple sauce to make it healthier. I was never able to tell the difference in the taste between the apple sauce and the oil. Feel free to try the origianl recipe as well. I don’t think you can go wrong either way. Enjoy!
