I came up with this recipe recently just by thinking of what usually is in Sweet & Sour Chicken. I experimented and found this recipe to be a hit! It is super easy to put together. It is low fat. It makes a fantastic freezer meal. I have made it three times in two months as well as making a freezer meal for someone who just had a baby.
Sweet & Sour Chicken |
3 boneless, skinless chicken breasts, cut into bite sized chunks
1 20 oz can pineapple chunks with juice
1 green pepper, cut into one inch, bite sized chunks
1 bottle sweet & sour sauce (I have used Kikkoman & LaChoy.)
Preheat oven to 350 degrees. In a large bowl, combine chunks of chicken, the whole can of pineapple chunks with juice, green pepper chunks, and the whole bottle of sweet & sour sauce. Mix together all ingredients until combined. Bake at 350 degrees in a covered, medium-sized casserole dish for 45 minutes to 1 hour. Chicken should be cooked through and casserole should be bubbly.
Tips
- I have also made this in a large wok. You can also make it in a large dutch oven. Cook over medium heat for 20-30 minutes or until chicken in cooked through and green peppers are soft.
- You can go gluten-free on this recipe. Certain sweet & sour sauces contain wheat while others do not. Just check the ingredients.
- This makes a great freezer meal! Put all of the ingredients in a gallon-sized resealable plastic bag and freeze. Take out the night before you would like to make the meal and let it thaw overnight in the refrigerator. Then cook according to recipe directions.
