Huckleberries!

I am blessed to have some raspberry bushes which I received from my mother-in-law and transplanted.  These transplants are from her raspberry patch which in the past have been grand champion winners in the Montana State Fair.  Now, it is also huckleberry season in Montana.  If you have never had a huckleberry, please put it on your bucket list and make plans to come and stay in Montana.  It is surely something worth experiencing.

Quick Oats 3 Ways

With all this wonderful fruit around the house, I have to think of yummy things to make with my summer goodies.  One thing my daughter and I love to make are quick oats.  So, here is how we make quick oats in three different ways.

Huckleberry Pecan Quick Oats

1 cup quick oats (not old fashioned), divided
2 teaspoons granulated sugar, divided
Cinnamon
4 Tablespoons fresh huckleberries
1/8 cup chopped pecans, divided

In a Mason jar, layer 1/2 cup oats, 1 teaspoon sugar, a sprinkle of cinnamon, 2 tablespoons of fresh huckleberries and half of the pecans.  Repeat layer one more time.  Store in refrigerator for up to 5 days until ready to prepare.  When ready, pour 1 1/2 cups boiling water (more or less to taste) and let sit for approximately 5 minutes.  Be careful!  The jar will be hot from the boiling water. 

Cherry Chocolate Quick Oats

1 cup quick oats (not old fashioned), divided
12 Fresh cherries
Semi-sweet chocolate morsels

Cut cherries into quarters and take pits out of the cherries.  In Mason Jar, layer 1/2 cup oats, half of the cherries, and a sprinkling of chocolate morsels.  Repeat layer one more time.  Store in refrigerator for up to 5 days until ready to prepare.  When ready, pour 1 1/2 cups boiling water (more or less to taste) and let sit for approximately 5 minutes.  Be careful!  The jar will be hot from the boiling water.

Raspberry Almond Quick Oats

1 cup quick oats (not old fashioned), divided
2 teaspoons granulated sugar, divided
Cinnamon
Raspberries
Sliced Almonds

In Mason Jar, layer 1/2 cup oats, 1 teaspoon sugar, a sprinkle of cinnamon, a small layer of raspberries, and a sprinkle of slicked almonds.  Repeat layer one more time.  Store in refrigerator for up to 5 days until ready to prepare.  When ready, pour 1 1/2 cups boiling water (more or less to taste) and let sit for approximately 5 minutes.  Be careful!  The jar will be hot from the boiling water. 

The sky truly is the limit with these quick oats.  We have made, for example, banana nut by using dried bananas and pecans.  You can also just make one layer if you would like a smaller portion.  Enjoy!
