The first time I made these cookies, they were gone within the same evening. I was more than happy to help, of course. The next night I doubled the recipe and made more. Needless to say, they were a hit. These cookies are soft as opposed to a crisp cookie and have a light texture to them. I bet you can’t eat just one.
Peanut Butter Chocolate Chip Cookies |
1/2 cup (1 stick) butter, softened
1/2 cup creamy peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 tsp baking soda
1/2 tsp baking powder
1 egg
1 teaspoon vanilla
1 1/4 cup all-purpose flour
1/2 cup miniature chocolate chip
In a mixing bowl, cream butter, peanut butter, and sugars together using a hand mixer. Add baking powder and baking soda and beat together. Blend in egg and vanilla. Add flour and beat well. Stir in chocolate chips. Scoop out dough using a cookie scoop and place on an ungreased cookie sheet. Bake at 375 degrees for 7-10 minutes. Cool on a wire rack. Store in an airtight container.
