Best Ever Chocolate Cake

Are you looking for a light chocolate cake recipe which will help you stay on track with your weight loss goals for the new year?  Well, this cake IS NOT for you.  Are you looking for a delicious chocolate cake which will wow your family and friends at every dinner or at any potluck?  Well, this cake IS for you!

 
This is an old recipe I got from my mother.  She says this recipe is older than me so you know it must be pretty old.
 
Don’t let the thought of making a cake from scratch scare you!  It is so simple, so easy and so worth it.  You don’t even need a mixer, but only a spoon.  You can do it.  I have faith in you!

 

Best Ever Chocolate Cake

So let’s get started.

Sift together in a large bowl
2 cups sugar
2 cups all purpose flour
1/2 tsp. salt

 

Mix in saucepan
1 cup water
1/2 cup shortening
1/2 cup butter (1 stick, I use salted butter)
3 TB cocoa
 
Bring water, shortening, butter and cocoa to a boil in the pan and pour over flour mixture.  Stir together.

 

Add the following to your bowl
2 eggs
1/2 cup buttermilk
1 tsp. baking soda
1 tsp. vanilla extract
 
Mix well.  Pour into a greased 13x9x2 inch pan and bake at 350 degrees for about 30 minutes or until set.
Now to make the Chocolate Icing
6 TB milk
3 TB cocoa
1/2 cup butter (1 stick, I use salted butter)
1 tsp. vanilla extract
1 cup pecans, chopped
1 16 oz box powdered sugar
Mix and melt together the above ingredients in a medium saucepan.  Pour over cooked cake while hot and spread out evenly.  Cool completely.

 

Variations
  • To make Mississippi Mud Cake, add a layer of miniature marshmallows to the top of the the cake before you pour on the hot icing.
  • If you are in a time crunch, use a store bought chocolate cake or chocolate brownie mix and pour the homemade chocolate icing on the top.  It won’t be as good as homemade, but it will do in a pinch.
