Pepperoni Wraps

It is time for another school year.  I don’t know about you, but I find it hard to be creative when it comes to lunches for the kids.  Sandwiches and Lunchables seem to get old pretty quick.  Here is a wrap that my kids really like.  I like it too, because I think it is healthy for a lunch.  They get a meat (pepperoni), a dairy (cheese), a carb (tortilla), and a vegetable (pizza sauce) all in one meal.  Not bad for a school lunch.

Pepperoni Wraps

Flour tortillas (soft taco size)
Pepperoni slices
Mozzarella cheese
Pizza sauce

Lay one flour tortilla on a microwave safe plate.  Place 6 pepperoni slices (more or less to taste) evenly around the tortilla.  Sprinkle with mozzarella cheese.  Microwave for 15-30 seconds or until cheese is melted.  Roll up tortilla from one end to the other like a burrito.  Serve with pizza sauce for dipping.  Enjoy.

 

Tip:  If putting pepperoni wraps into containers or plastic bags for lunches, let wraps cool for a minute or two before placing into containers.  If they are put in the containers too soon, they will sweat inside of the container and become soggy.
