Peanut Butter Cookies

I have to give a shout-out to my mom for this recipe.  I remember her making these for us when I was a little girl.  They are, in my opinion, the best peanut butter cookies I have ever had.  I love them, because they are so simple and require only three ingredients.  I cannot tell you how many times I have whipped up a quick batch of these cookies for a late night snack when I had a sweet tooth after dinner.  As a college student and now as a stay at home mom, I have loved the fact it only has three ingredients.  Even if my cupboard looks like Old Mother Hubbard’s, I usually can always find what I need for these cookies.  So, I hope you love them as much as I do.  Even if you don’t, it is a great and simple recipe for a thrifty budget.

Peanut Butter Cookies
1 c. crunchy peanut butter
1 c. sugar
1 egg
Mix all of the above ingredients together.  Scoop out dough by tablespoons and roll into 1 inch round balls.  Dip a fork in a glass of water and press down on the cookie with the tines of the fork.  Turn the fork to the side and press down again on the cookie to make a criss-cross pattern on the top of the cookie.  Repeat the process with all the cookies.  Bake at 350 degrees on ungreased cookie sheets for 8-10 minutes.  Be careful not to overcook.  The bottoms of these cookies can get dark quick if you cook them too long.  Recipe makes about 18 cookies.
