My Favorite Granola

Fall is coming.  Leaves are beginning to fall from the trees, and the nights and days are getting cooler.  I start to look forward to fall recipes-soups, pumpkin dishes, and wholesome, crunchy granola.  I have tried several recipes for granola, but this one is my favorite.

My Favorite Granola

4 c. old-fashioned oats (not instant)
1/2 c. sunflower seeds
1/2 c. chopped pecans
1/2 c. chopped walnuts
1/2 c. sliced almonds
1 tsp. cinnamon
1/2 tsp. salt
1/3 c. vegetable oil
1/2 c. honey
1/2 c. packed light brown sugar
2 tsp. vanilla extract

Preheat oven to 375 degrees.  Grease, or spray with cooking spray, a large rimmed baking sheet.  In a large mixing bowl, mix together oats, sunflower seeds, nuts, cinnamon, and salt.  In a medium saucepan, combine oil, honey, and brown sugar and bring to a simmer over medium heat.  Remove from heat and add vanilla.  Pour hot liquid over oat mixture.  Stir all ingredients together to incorporate.  Spread granola out on baking sheet.  Bake for 15-20 minutes stirring every 5 minutes to ensure even browning.  Watch closely at the end of your time to make sure it doesn’t get too brown.  Let cool on counter for 20-25 minutes, stirring occasionally.  When thoroughly cool, store in airtight container.

My favorite way to eat this granola is with vanilla yogurt (I think Tillamook French Vanilla is the best), granola, and lightly sweetened raspberries on the top.  I also really like having it just as a cereal.  It is surely crunchy, nutty goodness.
