Cucumber Tomato Salad

Want a cool, refreshing summer salad?  Here is a simple one to try before the summer heat gives way to the coolness of fall.

Cucumber Salad

I medium sized cucumber
1 medium sized tomato
1 8 oz. pkg. mozzarella cheese
Italian dressing

Peel cucumber and slice.  Cut each cucumber slice into quarters.  Cut ends off of tomatoes and cut into bite-sized chunks.  Cut mozzarella cheese into bite-sized chunks.  I like to cut 1/4 inch slices in the cheese and then cut each slice into quarters.  Add Italian dressing until well coated.  This salad can be served right way, but it is better if it sits for a couple of hours to let the flavors marry before eating.

 

Variations:

You can use a small container of cherry tomatoes (as I did in the photo) instead of the tomato.  Cut cherry tomatoes in half and add to the salad.  I have also had it with orzo pasta and feta cheese instead of the mozzarella cheese.  This makes it more of a pasta salad rather than a vegetable one.

This one is so easy and with only four ingredients, how can you go wrong?  Enjoy!
