Chess Pie

A typical Southern Chess pie is simply delicious as well as economical.  Most, if not all, of my Southern friends when they see this post will say, “Oh, I already have this recipe.”  However, I am sure most, if not all, of my Northern friends will wonder, “What is Chess pie?”

Chess pie is a simple pie made with simple ingredients.  My son calls it butter pie so take that for what it is worth.  When Carl and I didn’t have two dimes to rub together, this is the pie I would make and take to parties or potlucks due to its simple ingredients.  It is made out of ingredients you almost always will have on hand. Chess pie and my mom’s peanut butter cookies are two of my all time favorite recipes.

Chess Pie

3 large eggs
1 1/2 c. sugar
1 tablespoon vinegar
1 stick butter, melted and cooled
1 tablespoon vanilla
8 inch pie shell
Beat eggs lightly with a fork.  Add sugar and vinegar.  Stir well.  Add butter and vanilla, blending well.  Pour into unbaked pie shell (see below).  Bake at 350 degrees for 1 hour.
Pie shell:
You can use a frozen pie shell, a refrigerated pie crust, or make your own crust.  I almost always make my own, but you can choose what works best for you and your lifestyle.  I hope you enjoy this Southern sweetness!
