Cherry Cheesecake

What a blessing it is to be able to make a dessert, and it becomes a family affair.  This recipe is simple and easy enough even for the kids to help out.  It felt like we were in the book The Little Red Hen.

She will mix the cheesecake.
The cheesecake will look scrumptious.
The family will be more than happy to eat the cheesecake.

Cherry Cheesecake

1 8 oz block of cream cheese, softened
1 14 oz can of sweetened condensed milk
8 oz Cool Whip
1/3 cup lemon juice
2 cups graham cracker crumbs
1 stick butter or margarine
(You can use a store bought 8″ deep dish or 9″ graham cracker crust in lue of the graham cracker crumbs and butter.)
1 can cherry pie filling
With mixer, blend milk and cream cheese until smooth.  Add lemon juice and mix well.  Fold in Cool Whip by hand.  Melt butter and mix with the graham cracker crumbs.  Press into a 9″ pie pan or 8″ deep dish pie pan.  Pour mixture over crumbs.  Top with pie filling.  Refrigerate for at least 2 hours.
